With the summer months so full of on-the-go outdoor activities, get-togethers, and socializing with friends and families, it can be hard to slow down and spend time cooking in the kitchen!
I love having a few simple summer staple recipes that are healthy, fresh and light, and easy to make when you’re short on time and energy. Last month I shared my favorite allergy-friendly, nutrient rich Fiesta Bean Salad recipe and a special dessert I made using a secret ingredient – Aquafaba! Fiesta Bean Salad
1 can of low-sodium chickpeas (rinsed, liquid saved)
1 can of low-sodium black beans (rinsed)
1 can of sweet corn (or 1.5 cups of fresh roasted or grilled corn off the cob)
1 cup diced bell pepper
1 cup diced cherry tomatoes
dressing:
1/4 cup olive oil
1 tsp cumin
juice of 1 lime
cayenne pepper, to taste
Mix all ingredients together in a large bowl, stir to blend well. Enjoy!
Aquafaba Berries and Cream
Liquid from 1 can of chickpeas (aquafaba)
Mixed Berries
1/8 tsp cream of tartar
1 tsp vanilla
sugar to taste
Reduce aquafaba on stove over low heat for ten minutes. Pour into immersion blender or handheld mixer, add cream of tartar, vanilla, sugar, whip until fluffy. Add berries, enjoy!
